Discover Rusalka

Tradition, tasting and craftsmanship

01 The Malossol tradition Malossol

Malossol, “little salt” in Russian, is the most traditional salting method: a minimal dose, worked by hand in small batches, without pasteurisation. The grain stays intact, the flavour fully revealed.

Less salt. More character.

The art of serving

All the secrets of a perfect tasting

Six simple gestures to serve caviar the proper way, from the fridge to your table.

Open the full guide
  1. Kept cold

Between 0 °C and +4 °C, keeps for three months.

  2. Presentation

Take the tin out a few minutes before serving and present it on a bed of ice to let the aromas develop.

  3. The spoon

Served at the table: Choose a mother-of-pearl spoon, never metal, which alters the taste.

  4. For a cocktail reception “à la royale”

Standing, place a small amount of caviar on the back of your hand to appreciate its colour and taste.

  5. Pairings

The more powerful the caviar, the subtler the accompaniments should be, to preserve the balance of the tasting. Warm blinis, crème fraîche, soft-boiled egg, crushed potatoes. Brut champagne or ice-cold vodka.

  6. Tasting

Once opened, a tin is usually enjoyed in one sitting. But caviar keeps its flavour for 24 to 48 hours at most.
